2018 Hong Kong Disneyland Trip

My last visit to Hong Kong Disneyland in 2014 was so magical that I knew returning on this year’s visit would be a priority. I decided to spend 2 days at Disneyland and opted to do the cheapest option, which was to commute there by train from my cheap hostel in Kowloon.

Big Buddha and Black Panther

Although I’d spent the past 3 years dreaming of going back to Hong Kong, I actually hadn’t set up any kind of itinerary for my trip back there this year. I suffered through jetlag for my first weekend there, and then I went to Disneyland on Monday and Tuesday. Beyond that, I hadn’t made any plans for myself.

However, on my way back to my hostel on Tuesday night, I formulated a plan to take myself on a date the following day because it was Valentine’s Day, and I wanted to treat myself and celebrate the success of my solo travels so far.

Disney Beach Engagement

“I want to practice couples photography,” I told my friend Meredith.

I really had wanted to take more photos of people, after I had enjoyed doing a beach yoga photo shoot a few weeks prior.

However, there was an ulterior motive behind my photo shoot suggestion of going to the Grand Floridian on the first morning of Meredith and Jake’s Disney World vacation.

May the Fourth Be With You

If  you know me in person, then you already know that there is no such thing as too much Star Wars, in my opinion. I’ve read almost all of the books in the new canon, I’ve watched all the movies dozens of times, and I even took up running because of Star Wars.

Favorite Florida Vegan Food of 2017

For people with eating limitations, vacation can be a mixed bag. However, it’s starting to get easier and easier to find vegan food throughout the world, and Florida is a great example of a vacation destination that is bursting with plant-based options!

I’m hoping that this post can inspire some of Florida’s vegan visitors (and residents) as well as make omnivores aware of how delicious vegan food in the Sunshine State can be, in hopes that they will consider reducing their meat consumption to help the environment.

After 48 hours in Hong Kong, I was starting to worry that my whole time in Hong Kong was going to be a bust.

A Vegan Feast with Chef TJ

Is it silly to have a bucket list item revolving around vegan food? Maybe so, but that didn’t stop me from spending years drooling over the idea of having Chef TJ cook his famous multi-course vegan meal for me!

Photo Essay: Celebration, Florida

I first fell in love with the perfect little town of Celebration three years ago. For a while, I was visiting it as often as I could, but then eventually I lived there for about a year and a half. Although I’ve spent so much time walking around my little town with a camera, I don’t have a lot to say about Celebration other than what I said in my original post, in which I gushed about how perfect it is. (Unless you count this cheesy little video I made from one of my nature walks there.)

April 2017 – March 2018: What I’ve Been Up To

40856324591_fa29f370c6_k

A year ago, I was experiencing some of the worst times of my life. I was struggling with mental and physical health, and I was not feeling comfortable in my career. I loved my students but was so burnt out from the challenges of teaching and being a team leader. Even living just outside Disney World was not much of a silver lining, because I often didn’t have the time or the energy to spend time there. I stopped attempting to update my blog because I had started to hate writing as much as my students did. I promise, I’m in a much happier place right now, but I think it’s worth recording some of the challenges and highlights of my past year.
