Pink Dolphins in Hong Kong

Despite being a lover of all things nature, I’m extremely skeptical when it comes to animal encounters. I enjoy seeing animals, as most people do, and the popularity of certain animals makes them easy targets for exploitation. However, it didn’t take long to find a way that I could experience Hong Kong’s pink dolphins without causing harm to them in the process.

Favorite Florida Vegan Food of 2017

For people with eating limitations, vacation can be a mixed bag. However, it’s starting to get easier and easier to find vegan food throughout the world, and Florida is a great example of a vacation destination that is bursting with plant-based options!

I’m hoping that this post can inspire some of Florida’s vegan visitors (and residents) as well as┬ámake omnivores aware of how delicious vegan food in the Sunshine State can be, in hopes that they will consider reducing their meat consumption to help the environment.

My Wintry Week in Ohio

After saying goodbye to Florida and dropping through Alabama for a few days, it was time to go to Ohio. My last visit had been over the summer of last year, during which I complained a lot about how it was TOO COLD; despite the fact that I spent the first 19 years of my life in Ohio, I never adapted to the cold, and I very much feel like a true Floridian, putting on a sweatshirt the moment it drops below 80F. I started this February trip with the knowledge that I was going to be miserable, but that I only had to survive for a week until I was on my way to the tropics!

Photo Essay: Celebration, Florida

I first fell in love with the perfect little town of Celebration three years ago. For a while, I was visiting it as often as I could, but then eventually I lived there for about a year and a half. Although I’ve spent so much time walking around my little town with a camera, I don’t have a lot to say about Celebration other than what I said in my original post, in which I gushed about how perfect it is. (Unless you count this cheesy little video I made from one of my nature walks there.)

April 2017 – March 2018: What I’ve Been Up To

A year ago, I was experiencing some of the worst times of my life. I was struggling with mental and physical health, and I was not feeling comfortable in my career. I loved my students but was so burnt out from the challenges of teaching and being a team leader. Even living just outside Disney World was not much of a silver lining, because I often didn’t have the time or the energy to spend time there. I stopped attempting to update my blog because I had started to hate writing as much as my students did. I promise, I’m in a much happier place right now, but I think it’s worth recording some of the challenges and highlights of my past year.

A Hong Kong Picnic

I just finished reading a book set in Hong Kong and I got so emotionally involved in the setting that when I left my house to run some errands, I was genuinely shocked to step outside and realize that I was not actually in Hong Kong. Since I’ve been so expertly transported back to one of my favorite cities in the world, I thought I’d share a memory from HK that popped into my head today as I read.
